Cheese Straws

When I tasted cheese straws for the first time it  was love at first bite. Of course, I bought that tin years ago; I didn't even think of making my own. However, with money tight, it does make sense to make your own holiday treats. Cheese straws are nothing more than savory pastry. The preparation method is the same as any good pie pastry, and the results are worth the effort.

Use a good quality, sharp Cheddar. No fake cheese, please! These tasty straws go with almost anything. I enjoy them with a bowl of hot tomato soup or chili, savory dips, with red wine, or on their own.

As with any pastry, Do Not Overwork! Finished product should be flaky, not tough.

1 cup all-purpose flour
1/2 teaspoon baking powder
1 cup shredded cheddar cheese
1/2 cup butter
3 tablespoons ice water

Preheat oven to 400°F (205°C).

Combine all ingredients, except water, with a pastry blender until mixture resembles coarse crumbs. Add water and mix well.

Form into strips with a cookie press. Bake on an ungreased baking sheet for 8 to 10 minutes. Serve warm or cold.
Makes about 28.
