Easy Salmon Croquettes

Whether you call them patties or croquettes, these tasty morsels make up quick and easy. Serve hot with your favorite sauce: Tartar, cocktail (My recipe follows), or herbed cream sauce.
These patties make great sandwiches, too. Put one on a bun then smear with cocktail sauce. A quick and yummy lunch treat!

Ingredients

1 15-oz. can salmon (Pink is good)
1/3 C. bread crumbs
1 tsp Old Bay seasoning
1 Tb mayonnaise
Cornmeal for breading
Oil for pan frying

Pick over salmon, removing skin. Crush bones and mix in with salmon. (The bones are rich in calcium and will not be noticable in finished product.)
In large mixing bowl add bread crumbs. Season with Old Bay. Add salmon then mayonnaise. Mix all this lightly. Do NOT mash or overmix.
Shape into patties then roll lightly in cornmeal. Fry in hot oil until golden brown on both sides. Serve hot.

My Cocktail Sauce

This versatile sauce is good with any seafood. Adjust hot sauce and horseradish to personal taste.

1 C catsup
3 Tb horseradish
Dash Worchestershire sauce
Few drops hot sauce
Squeeze lemon juice

Mix all together. Chill until ready to serve.
