Marinated Lamb Chops

I love lamb, and this recipe is one of my favorites. Make sure you use young American lamb. Otherwise, if you prefer the stronger tasting Australian or New Zealand lamb, use that.

Ingredients:

Wipe off chops. Set aside. In a large ziplock bag, put in garlic, vinegar, oil, pepper, and herbs. Then put in chops. DO NOT ADD SALT!
Seal tightly then put in refrigerator to marinate for at least 30 minutes to an hour.

Preheat broiler to 500°F. Lightly coat broiler pan with cooking spray. Remove chops from bag. Discard marinade & bag. Place on prepared pan and broil 6 inches from heat. Cook 6 to 8 minutes on each side for medium chops. Add or subtract time if you like meat rare or more well done. Season with salt to taste.

Serves 2.

I usually serve these chops with wild rice and a nice tossed green salad. A good Merlot or Cabernet goes great with lamb. Yummy!
