Chess Pie

This is my favorite and easiest recipe for this Southern classic. Be warned: This pie is notoriously rich — It's the butter and eggs, baby! Serve smaller slices than usual, but I doubt folks will stop at one piece!
To save time, use pre-packaged pie crust (the kind that folds out), and melt the butter in the microwave, using a micro-safe bowl.. Everything else can be mixed in the same bowl.

Ingredients:
1/2 C. butter (1 stick), melted
1 1/2 C. sugar
3 eggs
1 Tbs. cornmeal
1 tsp. vanilla
Pinch of salt
3/4 tsp. vinegar — white or cider vinegar will work. Do not use wine or balsamic!

1 9-inch pie shell, unbaked. Your recipe or pre-packaged

Mix sugar into melted butter. Let cool a bit then beat in eggs, one at a time. Add rest of ingredients and beat well.

Pour into prepared pie pan. Bake 400°F. for 15 minutes. Shake pie slightly. Reduce heat to 350°F. Bake for 25 to 30 minutes longer. Filling should quiver a bit when done. Allow to cool completely before serving.
